This recipe is so good.
The first time I had it I wanted seconds..and thirds...and I didn't even know it was a lite version!

Chicken Enchiladas Lite
1) 4 cooked, chopped large skinless, boneless chicken breasts
2) 2 cups (8
oz.) shredded reduced-fat 4-cheese Mexican blend cheese
3) 1 2/3 cups
plain fat-free yogurt (I used Trader Joe's)
4) 1/3 cup
butter, melted
5) 1/4 cup chopped onion
6) 1 tablespoon minced garlic
7) 1/4
teaspoon freshly ground black pepper
8) 1 can condensed reduced-fat, reduced-sodium, Healthy Request Cream of Chicken soup, undiluted
9) 1 can chopped green chiles
10) 3 fresh, chopped jalapenos
11) 8 (8 inch) corn tortillas
12) 1/2 cup
shredded reduced-fat sharp cheddar cheese
13) 1/4 cup
chopped green onions
-Preheat Oven to 350 degrees
-Combine first 10 ingredients in a large bowl. Remove 1 cup of chicken mixture and set aside.
-Heat a large skillet over medium heat. Working with 1 tortilla at a time, heat each tortilla in the pan (5 seconds) until soft. Remove from pan and arrange 1/2 cup chicken mixture down the center of the tortilla.
-Roll up tortilla and place seam side down in a 13X9 inch baking dish coated with PAM.
-Repeat process with remaining tortillas.
-Spread the reserved 1 cup chicken mixture evenly over the top of the enchiladas and cover with foil to put in the oven
-Bake for 20 minutes then uncover and top with sharp cheddar cheese and green onions. Bake an additional 5 minutes or until cheese melts and is bubbling!

Now, I know you are thinking...well the cheese, the butter, the tortillas, this isn't exactly a diet recipe...
BUT, if you are craving some enchiladas and can trade out the sour cream for fat free yogurt, the full fat cheese for the reduced fat cheese, and the corn tortillas for the flour...
You're being better than you would have been at MiCo.
